2 mn read

Nigerian fish sauce is a delectable, spicy dish that goes perfectly with rice, yam, or pasta. Here’s a straightforward recipe to make this savory sauce:

INGREDIENTS:

  • Fish: Mackerel, tilapia, or catfish (cleaned and cut into pieces)
  • 1 large onion: Chopped
  • 3 fresh tomatoes: Blended
  • 2 red bell peppers: Blended
  • 2 scotch bonnet peppers: Blended (adjust for desired heat)
  • 1 tablespoon tomato paste
  • Vegetable oil
  • Ground crayfish (optional)
  • Grated ginger
  • Minced garlic
  • Thyme
  • Curry powder
  • Salt: To taste
  • 2 seasoning cubes
  • Fresh parsley or basil leaves: For garnish (optional)

INSTRUCTIONS:

  1. PREPARE THE FISH:
    • Clean the fish thoroughly with water and a bit of salt or lemon juice.
    • Season with a pinch of salt and half of the seasoning cubes.
    • Grill, fry, or lightly steam the fish for 10-15 minutes until fully cooked. Set aside.
  2. BLEND TOMATOES AND PEPPERS:
    • Blend the fresh tomatoes, red bell peppers, and scotch bonnet peppers until smooth. This mixture will form the base of your sauce.
  3. SAUTÉ ONIONS AND SPICES:
    • Heat vegetable oil in a large pan or pot.
    • Add chopped onions and sauté until soft and translucent.
    • Stir in grated ginger, minced garlic, thyme, and curry powder. Cook for 2-3 minutes to release the flavors.
  4. ADD TOMATO MIXTURE:
    • Pour in the blended tomatoes and peppers. Stir and let it simmer for about 10 minutes on medium heat, stirring occasionally to avoid burning.
    • Mix in the tomato paste to enhance color and texture. Continue cooking for another 5-10 minutes until the oil separates from the tomato mixture.
  5. ADD THE FISH:
    • Gently incorporate the pre-cooked fish into the sauce, being careful not to break it apart.
    • Add the remaining seasoning cubes, ground crayfish (if using), and salt to taste.
    • Allow the fish to simmer in the sauce for an additional 5 minutes to blend the flavors.
  6. GARNISH AND SERVE:
    • Garnish with freshly chopped parsley or basil leaves for added freshness and color.
    • Serve with white rice, boiled yams, or a loaf of bread.

Enjoy your mouthwatering Nigerian fish sauce!
